More Thanksgiving - Roasted Veggies

Basic Roasted Veggies with are an easy and delicious addition to your Thanksgiving dinner.

Feel free to use almost any veggie, just make sure the ones that take longer to cook, are cut smaller. 

1 Butternut Squash, Peeled and cubed small (you can buy it this way)
2 fennel bulbs, cored and sliced
2 apples, cored and sliced into thin wedges
1 onion or 2-3 shallots, sliced
1/2 tsp Salt
1/2 tsp pepper
1/2 tsp sage and/or thyme
2 T olive oil

Mix everything together. Place in a parchment lined large baking sheet and bake at 425°F for about 45 minutes or until tender and partially browned.
