As the weather teases us with its indecisive behavior, one constant of spring is asparagus. The two ways I like best to prepare it are first to grill it (darn weather) and a close second is roasting which isn't weather dependent. Here's how I do it:
1 lb asparagus, trimmed
salt & pepper
1 T olive oil
Preheat the oven to 450°F. (yes, 450). Place the asparagus on an oven proof pan that will hold it in one layer, like a jelly roll pan covered with foil. Season with salt and pepper. Drizzle with the oil and roll it back and forth to coat evenly. Roast, rolling them over once, until it starts to brown. We like the tips to get brown and crispy. Enjoy.
