Feel free to use almost any veggie, just make sure the ones that take longer to cook, are cut smaller.
1 Butternut Squash, Peeled and cubed small (you can buy it this way)
2 fennel bulbs, cored and sliced
2 apples, cored and sliced into thin wedges
1 onion or 2-3 shallots, sliced
1/2 tsp Salt
1/2 tsp pepper
1/2 tsp sage and/or thyme
2 T olive oil
Mix everything together. Place in a parchment lined large baking sheet and bake at 425°F for about 45 minutes or until tender and partially browned.
